Mr. L&C and I don’t get to the movies often, now that we have a toddler. We love having fun movie nights at home after she goes to bed. I love creating a theme around our movies, and Hotel Transylvania 2 was the perfect time to create some fun concession-style treats with a twist.
I love all types of popcorn, especially the sweet-salty combination, and chocolate covered popcorn is always a welcome treat. Mr. L&C and I like different kinds of chocolate and candies, so I customized our bark. I spread M&M’S® Chocolate Candies over all the chocolate, and sprinkled unsweetened coconut flakes on his portion. Mine was a bit more colorful, with sprinkles and candy eyes. It was boo-tiful! (see what I did there?)
Coca-Cola is always part of our movie nights out, so I grabbed a 6-pack from Walmart, while I was gathering the rest of the ingredients for our monster munchies! Christmas cookies are some of my favorite cookies to make. Every year we make our traditional Cut-Out Sugar Cookies, as well as Ginger Crinkles, and Nutmeg Logs. I wanted to add a different cookie to the mix this year, and this twist on the classic snickerdoodle was the perfect choice. Eggnog Snickerdoodles will definitely be added to my Christmas cookie list from now on.
From what I can tell, people either love or hate eggnog. Mr. L&C loves it and can’t wait until December rolls around to start drinking it. To say these cookies were a hit is an understatement. When I opened the container, the nutmeg is prominent, and you can tell just by smell that these cookies are full of eggnog goodness.
I made some with the glaze, but actually prefer it without. The glaze doesn’t set hard, so they don’t stack easily with it. The cookies are good on their own and were gobbled perfectly fine without the glaze, so it’s your choice if you want to add it or not.
This batch went to a Christmas cookie exchange party with friends, and you can definitely tell that those who loved eggnog kept going back for more. Mr. L&C was happy they weren’t all eaten, so we brought the extras home to snack on during the week.
I haven’t tried freezing them, but I think they would do find baked, placed in a airtight container, then plastic wrapped to keep them fresh, if you like baking ahead. Since we make a lot of cookies, I will probably do just that with another batch, so we have them for the Christmas Day.

I have had apple cider donuts from the store or donut shops before, but I hadn’t had a fresh, made-to-order one until last year on my visit to Vermont. Cold Hollow Cider Mill is now one of my favorite spots in Vermont.
The hot made-to-order donuts are out of this world, and the freshly-pressed cider is like none other. I would visit Vermont in a heartbeat just to go to back Cold Hollow Cider Mill again. While on vacation, we loved it so much we went to the cider mill twice in the same week!
That Vermont trip was breathtakingly beautiful and so memorable. Mr. L&C and I drove all over Northern Vermont and had fun exploring.
We visited Cabot, the cider mill, a few apple orchards, fun restaurants, did wine & cider tastings, took a gondola to the top of Jay Peak (we could see Canada from the top), and more. Apple picking and the cider mill were probably my favorite experiences, since I had never picked apples before.
I cannot wait to take Little L&C apple picking for the first time. Here in FL we have strawberries, blueberries and citrus, so she has been picking those since she was a baby.

I have never made pignoli and now I can cross them off my baking bucket list. Do you have one of those? A list of things you want to cook or bake? I have a huge list and love crossing off items, like these pignoli.
Most of the recipes I have encountered use almond paste as the main ingredient. I love using pine nuts in savory recipes, like pesto and hummus. Cookies with pine nuts are so delicious and have such a great flavor. I opted to dust it with powdered sugar, because it not only looks beautiful, but gives it an extra little sweetness.
There is a very well known Italian bakery that doesn’t use almond paste, and I eventually want to try their recipe soon. For now, I baked this version and hope you enjoy it as much as I did.

Welcome to day 3 of #BrunchWeek! I am co-hosting this year’s #BrunchWeek with A Kitchen Hoor’s Adventures, and the brunch recipes keep getting better by the day! When I brunch, there is usually a carb involved – I’m a total “carbivore”. Sometimes it’s in the form of pancakes, waffles, toast, etc. While I do love bagels, they sometimes are too heavy when accompanied by a variety of food for brunch. These Everything Bagel Rolls are my answer to wanting the delicious everything bagel taste, but in a soft, pillowy roll.
I have a mason jar with my everything spice mix and I plan on baking a few different kinds of bread so I can use it all. Speaking of bread, I love Red Star Yeast. It is my favorite yeast to use – I have used it in culinary school, in my home kitchen, and in the bakery. It is high quality and consistent, making bread-baking a whole lot easier. RedStarYeast.com has so many delicious recipes and I want to bake every one!
Everything Bagel Rolls
Rolls adapted from Stephie Cooks
Everything Bagel Spice Mix a Love and Confection original recipe
Everything Bagel Rolls Ingredients:
Yeast Roll Ingredients:
– 1 cup shortening
– 1 teaspoon salt
– 1/2 cup Dixie Crystals Extra Fine Granulated Sugar
– 1 cup boiling water
– 2 packages (4& 1/2 teaspoons) Red Star Platinum Yeast
– 1 cup warm water (110F-115F)
– 2 eggs, lightly beaten
– 6 cups all purpose flour, sifted
– 1 egg + 1 tablespoon water, beaten for egg wash
Everything Bagel Spice Mix Ingredients:
– 1 tablespoon minced onion
– 1 tablespoon minced garlic
– 1 tablespoon sesame seeds
– 2 teaspoons course salt
– 1 & 1/2 tablespoon poppy seeds
Everything Bagel Rolls Directions:
1. In a large mixing bowl, dissolve shortening, salt and sugar, then let cool to 110F-120F.
2. In medium measuring cup, dissolve yeast into warm water. Add it to the shortening mixture. Whisk in eggs.
3. With a spatula, stir in the flour until combined. Cover bowl with lightly greased plastic wrap and refrigerate for 6-8 hours.
4. To bake, gently turn dough out onto a lightly floured surface and divide into 16 equal pieces. Tuck the edges of each piece under until the top of the dough is taut, like a bubble, place the dough onto your surface and gently roll the dough clockwise to tighten each roll.
5. Grease 2-3 9-inch cake pans and arrange the dough balls in them. Cover with a tea towel and let it rise for 1 hour. Near the end of the rise, heat the oven to 425F.
6. In a bowl or jar, combine all the ingredients for the spice mix. Lightly brush the tops of the rolls with the egg wash and sprinkle the everything bagel spice mix on.
7. Bake the rolls for 20-25 minutes, until golden brown on top, and cooked inside. If necessary, place a piece of foil over each pan, halfway through baking, to prevent topping from burning. Enjoy
